On Fridays I'm going to try to feature something each week that I made (or attempted to make).
Since I'm not really that handy/crafty/talented the definition of "made" might get stretched a bit.
This week I genuinely made a Key Lime Pie (the toddler helped), and as a bonus I discovered that a "food" he actually likes is sweetened condensed milk. I probably shouldn't have given him the spatula to lick before bedtime.
The recipe I used is here and it turned out better than some I have used in the past. Key Lime Pie is generally really easy, but some recipes call for too much of either eggs, limes, or sweetened condensed milk. This one seems to get it just right.
The one necessity is making the real whipped cream to top it off. It cuts the sweetness/tartness and is freakin' delicious. Do not, I repeat DO NOT purchase Cool Whip (or similar) to try and cut corners. Has anyone else noticed as an adult that this is one of those things you think "why did I EVER eat that crap?" It'd like guzzling oil and it's insanely expensive. The real stuff is SO much easier and cheaper and just so very good (in moderation of course). If you're lazy (like me) and want to speed things up just use a store bought graham cracker crust and you're off to the races. Enjoy!
