When I get some time I want to make everything pumpkin-based from The Pioneer Woman's website. I've been a fan of many of her recipes since long before she had a Food Network show. In fact, I've never seen the show but I enjoy her picture-based recipes and very searchable site.
One of the first things I ever made was these pumpkin spice muffins with cream cheese frosting which are a) super easy to make and b) blow the Tim Horton's ones out of the water. They are not gluten-free or vegan friendly (sorry peeps) but they are amazingly delicious if you don't require one or both of those options.
The picture doesn't do these puppies any justice. It must be the chilly air and feeling of fall we've been experiencing because without any indication that I was going to post this, Regan tuned to me the other day and said "Hey, remember those awesome pumpkin muffins? We need to make those again". Indeed we do.
